Baked Oatmeal

- 1/4 cup steel-cut oats
- 2 teaspoons baking powder

- 1/2 teaspoon ground cinnamon
- 2 cups milk
- 1  egg, beaten
- 1/3 cup applesauce
- 1/4 cup cooking oil
- 1/4 cup granulated sugar
- 1/4 cup packed brown sugar
- 2 cups fresh fruit (such as blueberries; peeled, cored, and chopped pears or apples; or chopped strawberries)  
- Plain or vanilla low-fat yogurt or milk or cream

- 1/4 cup reduced-fat milk
- 1 egg white
- Butter-flavor nonstick cooking spray
- 1 teaspoon  butter or margarine  
- Sifted powdered sugar (optional)

Cheesy Potato Leek Soup

- 1/4 teaspoon salt
- 1/8 teaspoon ground nutmeg
- 1/8 teaspoon cayenne pepper
- 1 cup shredded sharp cheddar cheese  
- Chives, for garnish

Honey Glazed Chicken Breasts

Ingredients

- 6  boneless skinless chicken breasts (1 3/4 pounds)
- 1/2 cup orange juice
- 1/2 cup honey
- 2 tablespoons lemon juice
- 1/4 teaspoon salt

Cooking Directions

  1. Heat oven to 375 degrees F. Spray 13×9-inch pan with cooking spray. Place chicken in pan.
  2. In small bowl, mix remaining ingredients; pour over chicken.
  3. Cover with foil; bake 20 minutes. Turn chicken; bake uncovered 20 to 30 minutes longer or until juice of chicken is clear when center of thickest part is cut (170 degrees F).
