Eggplant_Panini_recipe Ingredients

- 1 cup torn arugula
- 2 teaspoons red wine vinegar
- 1 teaspoon olive oil
- 1/3 cup seasoned fine dry bread crumbs
- 2 tablespoons grated pecorino Romano or Parmesan cheese
- 1 egg
- 1 tablespoon milk
- 2 tablespoons all-purpose flour
- 1/2 teaspoon salt
- 1 medium eggplant, cut crosswise into 1/2-inch slices
- 1 tablespoon olive oil
- 3 ounces fresh mozzarella cheese, thinly sliced
- 1 12-inch plain or seasoned Italian flat bread (focaccia),* halved horizontally
- 1 large tomato, thinly sliced

- 4 or 5 1/4-inch-thick potato slices
- 1 round Anytime Calzones Dough (search Recipe Center) or 7-inch round of unbaked pizza dough
- Olive oil
- FETA AND PROSCIUTTO VARIATION:
- 1/4 cup sliced roasted red sweet peppers
- 2 slices prosciutto
- 1/4 cup crumbled feta cheese
- 1/2 tsp. snipped fresh dill
- RICOTTA AND HAM VARIATION:
- 1/4 cup ricotta
- 2 Tbsp. grated Parmesan cheese
- 1 tsp. snipped chives
- 1-1/2 oz. good quality smoked ham, thinly sliced

Mini Mushroom-&-Sausage Quiches Ingredients

- 8 ounces turkey breakfast sausage, removed from casing and crumbled into small pieces
- 1 teaspoon extra-virgin olive oil
- 8 ounces mushrooms, sliced
- 1/4 cup sliced scallions
- 1/4 cup shredded Swiss cheese
- 1 teaspoon freshly ground pepper
- 5 eggs
- 3 egg whites
- 1 cup 1% milk

Martabak Telur is one of famous Indonesian snacks that which is a kind of fried pastry with meat and vegetable filling. You might think it is a very usual dish, but it tastes so good. You have to try …

Dough:

* 450g plain flour
* 175cc water
* 1/2 tsp salt
* 1 tbsp frying oil

Ingredients:

* 120cc oil
* 4 cloves garlic
* 750g minced beef
* 2 shallots
* 1 onion
* 2 tbs chopped chinese celery leaves
* 1 tbs curry powder (Reader’s Food comment: I usually don’t use this curry powder since It will give a strong smell of curry and I think Indonesian Martabak Telur – at least Jakarta style don’t use any curry powder.)
* 4 eggs
* 1 leek, halved lengthwise and sliced
* 1 tsp salt
* 1/2 tsp pepper

Dough: (Reader’s Food comment: I use spring roll pastry that is sold in most asian grocery store instead of making it from scratch)

Mix all the dough ingredients and knead them into an oily elastic dough.

Cover in a plastic wrap and leave in room temperature for 2 hours.

Divide the dough into four and roll each piece into a ball. Roll them out with lightly oiled rolling pin to make a large thin circle.

Filling:

Heat the oil, fry garlic and shallot until fragrant, add minced beef and saute over high heat until the meat browns..

Add onion, celery leaf and curry powder stirring until well mixed.

Put aside to cool it.

Add 3 eggs, leek and pepper to 3 and mixed thoroughly.

Heat 2 tbs oil, spread one rolled dough, put 1/4 of filling on the center of the dough circle and, fold in the sides and ends to completely enclose the filling.

Fry until browns, flip and fry the other side.

Cut into pieces and serve.
