Sweet peppers, onion, and potatoes are seasoned, wrapped in foil, and grilled in this easy side-dish recipe. Make this for a cookout and you won’t have to heat up the kitchen.
Ingredients
- 2 large russet potatoes (about 1 pound), peeled and sliced 1/2-inch-thick
- 2 medium red, yellow and/or green sweet peppers, cut into 1-inch pieces
- 1 small onion, cut into thin wedges
- 1/4 cup snipped fresh parsley
- 1/4 cup olive oil
- 1 to 1 1/2 tsp. seasoning blend, such as curry powder, Italian seasoning, or pepper blend
- 1/2 tsp. salt
- 1/4 tsp. ground black pepper
