Old-Fashioned Chicken & Dumplings

The delicious, satisfying results are packed with beneficial nutrients and dietary fiber, and because we don’t use canned soup for the sauce, sodium levels are drastically reduced. To go even lighter, try the recipe with boneless, skinless chicken breasts.

Ingredients

- 1 3/4 pounds  boneless, skinless chicken thighs, trimmed and cut into 1 1/2-inch pieces
- 2/3 cup  all-purpose flour
- 2 tablespoons  canola oil, divided
- 2  large carrots, diced
- 2 stalks celery, diced
- 1 large onion, diced
- 1 tablespoon poultry seasoning

Vegetable Stew with Cornmeal Dumplings

The hint of Parmesan cheese in the cornmeal dumplings makes them a fine match for this Italian-seasoned stew recipe.

Ingredients

- 3 cups  peeled butternut or acorn squash cut into 1/2-inch cubes
- 2 cups  sliced fresh mushrooms
- 2 14-1/2-ounce cans  diced tomatoes, undrained
- 1 15-ounce can  Great Northern beans, rinsed and drained
- 1 cup  water
- 4 cloves  garlic, minced
- 1 teaspoon  dried Italian seasoning, crushed
- 1/4 teaspoon  ground black pepper
- 1/2 cup  all-purpose flour
- 1/3 cup  cornmeal
- 2 tablespoons  grated Parmesan cheese

Chicken Tomato Wraps

Ingredients

- 2 tablespoons  vegetable oil
- 2 pounds  boneless, skinless chicken thighs, trimmed of all visible fat and cut into 1/4-inch-wide strips
- 1 large onion, chopped (1 cup)
- 2 cans (14.5 ounces each) diced tomatoes with jalapeno chiles
- 1-1/2 teaspoons ground cumin
- 1 teaspoon salt
- 2 small firm, ripe avocados
- 2 tablespoons fresh lime juice
- 1 cucumber, eeled
- 4 large  (11-inch) flour tortillas or sandwich wraps (plain, spinach or sun-dried tomato), warmed -following package directions
- 8 large  leafy lettuce leaves (about 1/2 large head)

- 1/2 cup balsamic vinegar
- 2 tablespoons firmly packed light brown sugar
- 2 teaspoons minced roasted garlic
- 2 teaspoons Worcestershire sauce
- 1 teaspoon liquid smoke
- 1 teaspoon salt
- 1 teaspoon ground black pepper
